This post contains two recipes, Banana Bread and Soy Milk.

Soy “Soya” milk Recipe

Soy milk is also known as soya milk in Nigeria. it’s extremely versatile and easy to make at home. All you need is clean soybeans and you are well on your way.Further processed soymilk is used in making Tofu aka “Wara soya”; the recipe can be found here.

  • 2 cups clean soy beans
  • Sugar  – to taste


  • In a large bowl, cover the soy beans with water. leave to soak for 10-12 hours
  • Remove the water and rinse out the beans
  • Pour the washed beans into a blender, add  in  cups of water. Blend until smooth
  • Sieve the mixture through a cheesecloth or local sieve , discard the chaff. Remove any excess foam
  • Set a large pot over medium heat, add the sieved mixture
  • Stir continuously until the milk starts to boil. boil for 10-15 minutes
  • Removed from heat and set aside to cool
  • Add sugar to taste . Serve cold

Banana Bread Recipe

This is my go to recipe for banana bread. I make some every time I have overripe bananas. It’s so easy and always a hit in my house. The decadent recipe works great as dessert, simply warm up a slice and top it with a scoop of icecream. yum yum.

Wet ingredients

  • 1/4 cup melted butter
  • 1/3 cup vegetable or canola oil
  • 3 Overripe bananas
  • 2 eggs
  • 1/4 cup liquid milk

Dry Ingredients

  • 2/3 cup sugar
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1+ 1/2 cups all purpose flour (224gr)
  • 1/2 cup mix (Chocolate chips, nuts and or shredded coconut )

  • Preheat the oven to 325F
  • Mash up the banana until smooth, add in the other wet ingredients. combine
  • Thoroughly combine the dry ingredients
  • Pour wet ingredients into dry ingredients and stir until just combined (resist the urge to overmix, it will make the bread tough)
  • Pour batter into a greased bread pan
  • Top the mixture with some more nuts, raisins or dried fruit if you desire
  • Bake  for  1 hour 15 minutes  or until wooden toothpick inserted in center comes out clean

Healthy Variation.

Banana bread can make a very healthy breakfast food. The great thing is that you can make it ahead and simply grab and go. My healthy variation uses the same recipe as above with the following modifications:
– Remove 1/4 cup butter and replace with 1/4 cup yoghurt
– Substitute vegetable oil with coconut oil
– Only use 1/2 cup of sugar
– Add in 1 cup of ripe fruit or berries
– Add in another 1 cup oatmeal into dry ingredients
– Replace mix with 1/4 cup dark chocolate chips
Follow the same direction as above. Banana bread should be divided into 12 equal parts after baking.There will be ~225 calories per piece.
