This dish was loosely inspired by stuffed yam balls. Since i didn’t want to deep fry (oil absorption is extremely high for mashed yam) and I still wanted a crusty shell, I decided to flatten them like pancakes and pan fry. The result was shear perfection – crust on the outside, soft and meaty on the inside. I thought having them as yam pancakes would be too basic, hence the stuffing. Feel free to just pan fry them and make yam pancakes if you prefer. I guarantee both adults and kids will thoroughly enjoy this healthier take.
