Savory Plantain Pancakes
This is one different way to serve plantain. This is a lunch or dinner version of ourbreakfast plantain pancake. It’s quick, delicious and a healthy way to make use of overripe plantains.
- 2 ripe plantain
- 1 egg
- Salt and pepper to taste
- 1/2 cup chopped vegetables
- Mash the plantain into a paste. Add in all left over ingredients and stir to combine
- Heat a lightly oiled frying pan over medium heat. Scoop in one cooking spoon of batter and spread to form a circle. Cook on both sides until golden (~2- 3 minutes per side). Repeat step until all the batter is cooked.
Serve with fried eggs or stew.
